Thin cookies sandwiched with dulce de leche, typical from Chile
Ingredientes
  • 2 cups (230g) all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp (60g) softened butter
  • 1½ tsp vinegar
  • 3 eggs
  • Dulce de leche for filling
Instrucciones
  1. Sieve the flour along with the baking powder into a bowl.

  3. Add the softened butter and mix well. Add the vinegar and mix again; this can be done by hand or on a stand mixer with the paddle attachment. We'll obtain a crumbly mixture.
  4. Then add the eggs and mix to homogenize. The dough should hardly stick to your fingers; if it does we'll add some more flour.
  5. Wrap the dough in a piece of plastic film and leave to rest for at least 30 minutes, so that the gluten can relax.

  7. Place the dough on a lightly floured counter and roll it with a rolling pin until very thin. Cut 2 inches (5cm) circles with a cookie cutter.
  8. Place the cookies on an oven tray, pierce them with a fork so that they don't expand in excess and bake the cookies 10-12 minutes in an oven preheated to 180º (no convection).
  9. Take them out to cool on a wire rack.
  10. When the cookies are cool spread in teaspoon of dulce de leche on half the cookies and sandwiched them with the other half. There you have the Chilean alfajores.
